Valentine's Dinner w/ Greener Grass Farms

Valentine's is this Friday! If you're anything like me, Valentine's isn't teddy bears and roses. Instead, Valentine's has turned into a family holiday. We cook our dinner, and I make paleo chocolate cakes in the shape of hearts.

Dan and Deb Marsh with Greener Grass Farms provided me with their grass fed and finished t-bone steaks. They would make a great Valentine's dinner. I paired the steak with roasted broccoli and mashed potatoes with organic goat cheese! I served the steak with a side of homemade horseradish sauce. Check out my recipe below.

T-BONE STEAKS IN GARLIC THYME BUTTER
INGREDIENTS
  • T-bone steak/s from Greener Grass Farms
  • Garlic
  • Fresh thyme
  • Kerrygold butter
  • Salt & pepper
METHOD
You could easily cook these beauties on the grill, but it was a snowy in MI today, so the cast iron skillet it was.
  • Get the cast iron skillet screaming hot. Like super hot... smoking hot.
  • Prepare the steaks by salt and peppering them. Set aside and wait for the skillet to get hot.
  • In the meantime, grab butter, garlic, and thyme.
  • Once pan is hot, add the steak to the skillet. Depending on how you like your steak cooked, cooking time will vary. If you prefer rare, I'd suggest 3/4 minutes per side. Medium, 5/6, and well done, 6/7.
  • After the first side sear, flip and cook the time you prefer. Just before removing the steak, add the butter, garlic, and thyme. Quickly spoon the butter sauce over the steak. Over and over.
  • That's it! Set aside to let rest, and enjoy!

PALEO HORSERADISH SAUCE
INGREDIENTS
  • 1 1/2 cups paleo mayo
  • 1/2 paleo horseradish - I prefer this brand and it can be found at Kroger
  • 1 teaspoon paleo Worcestershire sauce
  • 1/2 tablespoon white wine vinegar
  • Salt and pepper to taste

METHOD
  • Simply add all ingredients
  • Taste and add salt and pepper if needed
