If you follow my Facebook page, you know that I cook with Greener Grass Farms on the first Sunday of every month. I am so happy to work with Dan and Deb Marsh, owners of GGF! I love supporting them and their mission, and I am so grateful they let me spread the love of their products! This month I cooked with their soy free chickens. They are definitely a favorite in our house, and I love the endless versatility of a whole chicken. Not only is there meat, but there are bones, which makes for the ever popular bone broth.
Why soy free chickens? There are many health concerns with plant based estrogen. It's just not something I want to put in my body or my family's bodies. I've also talked about Eloise's soy sensitivity, and how her eczema flares when she consumes soy, so eating a completely soy free diet is essential.
Dan and Deb have whole and cut up soy free chickens available. Whole chickens are $5.50/lb and cut chickens are $6/lb. I prefer whole chickens, because I like to have control of my bird (lol). Scroll down for my roasted soy free chicken recipe.

WHOLE ROASTED GGF SOY FREE CHICKEN

I like to make a pan sauce with my drippings. I simply add 1/2 an onion, a clove of garlic, and 1/2 teaspoon thyme leaves to the drippings. I bring that to a simmer and add 1 teaspoon dijon mustard. I will sometimes add a splash of homemade chicken stock. Let simmer until mustard is well incorporated. Remove from heat and add 2 tablespoons grass fed butter and 2 teaspoons red wine vinegar. I promise... this stuff is the real deal.
