Paleo Date Balls

Hi, guys! I'm still here - just super busy during my busy season. I promise I'll be back more regularly in a few weeks :)

I've made these date balls in my stories, and a few of you asked for the recipe. It's really simple, and really versatile! I keep mine simple, but you can easily add fruit and various nuts. My recipe is below!

PALEO DATE BALLS
dairy free, gluten free, grain free, and soy free
*I should have a more set recipe for you, but I basically eye everything. Just make sure the mixture isn't too wet, and you can easily form balls.

INGREDIENTS
  • 20-ish dates
  • 1/2 - 1 cup cashews, almonds, pecans, walnuts, or sunflower seeds
  • 1/2 cup toasted coconut
  • 1/2-ish cup of chocolate chips

METHOD
  • Preheat oven to 350.
  • Soak dates in water for 5-10 minutes.
  • Toast coconut in the oven for maybe 3-5 minutes. Keep an eye on the coconut. Once it's turned golden brown, it's done. Let cool.
  • Strain dates and pat dry.
  • Add dates, nuts, and 1/4 cup of toasted coconut to a food processor. Combine well. Once combined, add the chocolate chips and pulse a few times until the chocolate is somewhat chopped into small pieces. 
  • Roll the mixture into balls and roll the balls in the remaining toasted coconut. 
  • They can sit on the counter for up to a week. Enjoy!
