I have a lot of recipes to get to you, but I really wanted to share this paleo meringue recipe! I've tried several meringue recipes, and they've turned out pretty bad. I've learned that you cannot use honey to make meringues... nope. They are terribly chewy, and they don't melt in your mouth. Pure maple syrup though - that's a different story. By simply using egg whites, maple syrup, a pinch of cream of tartar, and a splash of vanilla you get beautiful, melt in your mouth "clouds" as my girls call them lol. If you ask Eloise for the recipe, she will be sure to tell you that "clouds" are made with real clouds. SO CUTE. Please note that these take a while to bake and cool. Allow yourself a good 4 hours for these to be complete.
