This week I cooked a pastured pork roast from Greener Grass Farms! Roasts aren't just for winter or the crockpot. Roasts can be enjoyed year round and can be cooked on the grill, smoker, etc. I grilled this roast, and then put it in the Instant Pot to tenderize it and bring it up to temp. The roast was seasoned with a tex-mex mix. I made my taco seasoning, and made a quick bbq rub with seasonings I had on hand. I also sweetened it up with a little coconut sugar. I served my roast with a side of local veggies - all from Snick's Farm. I roasted organic red skin potatoes, kale chips, and broccoli.
